Frango Ă  Passarinho is one of Brazil’s most beloved appetizers, commonly served in bars and family gatherings. Ingredients

  • 1 tsp Bahian seasoning (or a mix of paprika + cumin)
  • 1 cup all-purpose flour
  • 1 tbsp dried oregano
  • 1 tsp baking powder
  • Oil for deep frying

Instructions

  1. In a large bowl, combine chicken pieces, mashed garlic, chopped onion, parsley, lemon juice, and Bahian seasoning. Mix well to coat and let marinate for 10–30 minutes.
  2. In a separate bowl, mix the flour, oregano, and baking powder.
  3. Sprinkle the flour mixture over the marinated chicken. Cover the bowl and shake it or mix until all pieces are evenly coated.
  4. Heat oil in a deep frying pan to 180°C (350°F).
  5. Fry chicken in small batches until golden and crispy, about 15 minutes.
  6. Remove and place on paper towels to drain excess oil.
  7. Garnish with more chopped parsley before serving.

Tips for Extra Crunch

  • For ultra-crispy wings, refrigerate the coated chicken for 30 minutes before frying.
  • Double-coating (marinade → flour → marinade → flour) makes the crust thicker and crunchier.
