Ingredients
- 400g mozzarella cheese, cut into sticks or cubes
- 2 eggs, beaten
- Coconut flour (for coating)
- Ground flaxseed (for coating)

Instructions
- Preheat the oven to 180°C (350°F).
- Lightly coat the mozzarella pieces in coconut flour.
- Dip into beaten eggs, then roll in flaxseed meal.
- For an extra-crispy coating, repeat the egg and flaxseed step.
- Place the cheese sticks on a baking tray lined with parchment paper or greased with olive oil.
- Bake for 10–12 minutes, flipping halfway through, until golden brown.
- Let cool for 2–3 minutes before serving.
